7 Layer Cookies


You know that time of day... for me it's about 3:00pm.
The kids are about to come home from school, everyone is getting hungry, you have no idea what to make for dinner, you realize that you could use a treat?

I try not to do this too often, but sometimes I just need a tasty, sugary pick-me-up.
Sometimes it's a handful of chocolate chips.
Sometimes a yogurt.
Sometimes an apple.
But as the weekend draws near, I get a little more crazy.

My weekend treats almost always involve chocolate... 
brownies, ice cream, chocolate chip cookies,
or these 7 layer cookies.

Some version of these cookies is undoubtedly in every cookbook in your kitchen.
This recipe, the one my mom used to make, is my favorite.

7 Layer Cookies

1/2 stick or 1/4 cup butter
1 cup graham cracker crumbs
1 pkg chocolate chips
1 pkg butterscotch chips
1 cup shredded coconut
1/2 cup chopped walnuts
1 can sweetened condensed milk

Preheat oven to 350.
Spray the edges of a 9x13 baking dish with cooking spray.
Melt butter in pan or microwave.
Using a fork, mix with graham cracker crumbs to form a crust.
Sprinkle chocolate chips, butterscotch chips, coconut, and walnuts.
Pour sweetened condensed milk over everything.
Bake at 350 for 20-25 minutes.
Cut while warm.


If you've never tried these, do it! They bake up in a cinch.

These look, and sound amazing! I really want to try them, but being from Scotland, can anyone tell me what butterscotch chips are, or if there is an alternative? Is it toffee pieces or fudge, or something totally different?
